My very own version of the famous Calderetang Batangas...
Some years back I remember sharing my baon directly from Batangas to some of my ManileƱo officemates. Did they like it? Absolutely! then they asked me what it was...Its Caldereta! I said. No! its not, its like adobo with liver spread. Calderobo it is! they said. Well that's just how BatangeƱos cooked it. We don't use tomato paste or sauce like other provinces cook with theirs. And yes it does seem taste like Adobo but waaaayyy more yummier! Why not?! it has way more spices that it looks. Its sweet, spicy, umami salty, creamy and tangy all at the same time. Where else do you cook Caldereta with liver spread and peanut butter? Only in Batangas!
Elders said its best cooked with Goat meat. I have tried goat meat Caldereta but its not really my liking... I'd still prefer pork or chicken, haven't tried the beef version yet. But I've had beef caldereta just not Batangas style.
In every year's Town Fiesta there would always be the "Calderetang Batangas Cook-off", participated by the Cooks from different Batangas Eatery/ Resto famous for their Calderata. But being an Iglesia ni Cristo member, I'm not really a fan of fiestas. So, I haven't really seen the competition live only in local news, thanks to TV10-Batangas.
One would usually find this Traditional Batangas version of Caldereta in most Eateries around the City, but most of Restaurants would serve the Typical Calderata with tomato sauce unless they have it on the Menu. <by Eatery I mean, your typical fastfood resto where foods are already cooked, displayed on warmers for the customer to choose from. And by Restaurant, a resto where you get to served by waiters and handed a menu for you to choose from.>
So if you happen to be around Batangas City and wanted to try this version, you would want to go to Eateries instead.
